Delicious cordials, jellied preserves and sorbets
For Juice Production Fill the lower pan with water and place on the stove with the intermediate section over it. Fill the steamer section with fruit, place it on top, and cover with the lid. Steam from the boiling water in the pan extracts juice from the fruit; the juice is collected in the middle pan. Wearing gloves to protect your hands draw off the juice into pre-heated glass juice bottles by opening the clip on the plastic tube. Seal using plastic screw caps inverting the bottles to pasteurise the caps; store upright once cool.
For Cordials Layer the fruit with the sugar according to the recipe. See our delicious recipes
For Blanching Refer to the table of timings in the cookbook supplied

Featured in the ‘On Test – Preserving’ article in Grow Your Own magazine, September 2013 issue by Dave Finkle: "Real high quality, no corners were cut here. The stainless steel, robust design certainly filled me with confidence. A lot of thought has gone into the steamer. It has so many possibilities, from steaming to juicing to making fruit jellies; it does everything you could want in the kitchen. It comprises of three sections that provide you with several options of use. There is so much you can do with it… Simply superb!" Pamela Deschamps wrote in The Kitchen Garden: "I had never used a fruit steamer but it is a simple clean operation which quickly converts soft fruits into delicious drink concentrates which set your taste buds tingling".
Caroline Pakenham, author of Making Jellied Preserves, uses a Mehu Liisa Steamer and wrote: "I have been using a muslin and up-turned chair for straining for so long that I believed I couldn’t use anything else but I have to say that I have been experimenting with the Mehu-Liisa fruit steamer and have found it very quick. It isn’t too expensive and I would highly recommend it as a juicer and a steamer for all soft and stoned fruits in the making of jellies."
