Bramley Apple Week 6 -12 February 2018
Yes, we’re not joking, there really is a National Bramley Apple Week! Grown in the UK specifically for cooking, Bramley apples are one of the most versatile ingredients around. Essential in apple pies and crumbles, and recognised as the perfect complement to pork, the unique 'appley' flavour of the Bramley is irresistible in a huge range of sweet and savoury dishes.
To celebrate the British treasure that is the Bramley Apple, here are 3 recipes you can make for a 3 course dinner, all of which use Bramley apples.
To Start: Tomato Bramley Soup
Handful of fresh basil leaves
Place the Bramley apples, tomatoes, garlic and oil in a large pan and season well. Cover with a tight fitting lid then bring to the boil over a medium heat. Simmer for 15-20 minutes, or until the apples, tomatoes and garlic have completely broke up.
Transfer to a blender, add the remaining ingredients and whizz until the soup is smooth. Finally, adjust the seasoning according to taste and gently reheat before serving in bowls with crusty bread.
For Mains: Pork and Bramley Bake
1 tbsp fresh sage leaves or 1tsp dried sage
Preheat the over to 200°C / Gas mark 6. Place the potatoes, onion, garlic and oil in a large roasting tray or dish. Toss together and season with salt and freshly ground black pepper. bake for 15 minutes.
Remove from the oven, then stir in the Bramley sliced and lay the pork steaks on top. Season and sprinkle over the sage and then return to the oven and bake for a further 20 minutes or until the pork is golden and the Bramleys and vegetables are tender.
Serve with green vegetables. But leave room for Dessert!
For Dessert: Baked Bramleys with Berries
225g frozen fruits of the forest
Preheat the oven to 200°C /gas Mark 6. Place the Bramley apples in a shallow ovenproof dish. Add the sugar and toss until the apples are coated.
Shake the apples so they form a singe layer and bake for 10 minutes.
Add the frozen fruits and bake for a further 15 minutes or until the Bramleys are tender. Serve warm with ice cream, cream or custard.
