Currants & Berries
Hot juice extraction by steaming
is ideal for currants (blackcurrants, redcurrants and whitecurrants),
for hard fruits like crab apples and quinces, and for berries like
blueberries, raspberries, loganberries and elderberries. Gentle cooking
by the steaming method enhances the flavour of all these fruit juices.
The clear juice in its unsweetened state is ideal for making jellies
and can be added to apple juice for an exciting variety of flavours.
When
steamed with sugar, delicious cordials can be produced in one easy process.
Careful hot bottling preserves the cordial indefinitely so that you can
savour the taste of summer even in the depths of winter – there
is nothing quite like a hot blackcurrant or spiced berry cordial drink
to warm you on a cold day! Cordials can also be used in homemade sorbets
and icecreams.
