It’s reassuring to learn that Granny’s old rules for preserving have not changed over time. Preserving means sterilising food in special glass containers without the use of any chemical agents.
Our stainless steel and enamel juice pasteurisers can also be used as an Auto-Preserving Cooker; it generates an even heat that kills the germs in the foods to be preserved, whilst at the same time creating a vacuum that hermetically seals the jar and prevents recontamination. Most bacteria that cause food to spoil are destroyed at temperatures ranging from 74º C/165ºF to 100ºC/ 212ºF for a set period of time. The time and temperature of preserving varies according to the acidity of the food.
But the preserving cooker has come along way since Granny’s time and this cooker makes the process easy and efficient!
When used in conjunction with rubber sealed preserving jars, the pasteuriser/preserving cooker with its thermostat control and automatic timer, ensures that foods are properly sterilised. Full instructions are given with the equipment. Bottled foods should be stored in a dry, cool, dark place to prevent discolouration and should be consumed within a year of production.
